Waffle Recipe (for Chicken & Waffles)

Fluffy gluten-free waffle under crispy fried chicken thighs drizzled in hot sauce and maple syrup.

In my last post, I covered the “chicken” part of “chicken and waffles,” meaning today I’m going to visit the waffles part! Note that I only eat waffles as part of chicken and waffles. I think they’re a little heavy to just have some waffles for breakfast with butter and syrup. I like the addition of savory and salty flavors from the fried chicken, and the balance of sweet and spicy flavors from the syrup and hot sauce drizzled over the top.

This recipe will be fine for any waffle-maker. I have a stove-top cast iron waffle-maker that I prefer, but if you have a countertop electric model, it shouldn’t make much difference. The keys to perfectly cooked waffles that don’t stick is non-stick spray, proper preheating of your iron, and using an appropriate amount of batter.

Now let’s dive into the recipe!

Ingredients:

Dry-
¾ c. gluten-free all-purpose flour
½ c. brown rice flour
¼ c. coconut flour
2 tbsp. sugar
½ tsp. baking powder
1 tsp. baking soda
¼ tsp. salt
1 tsp. xanthan gum

Wet-
1 ¼ c. buttermilk
3 tbsp. light oil (canola, soybean, vegetable, etc.)
1 egg
1 tsp. vanilla extract

Special tools-
Waffle iron
Non-stick spray

Directions:

  1. Preheat waffle iron while preparing the batter. Insert baking sheet into oven and preheat to 170°F to hold warm waffles for service.
  2. In a large bowl, combine all dry ingredients, whisking to break up any lumps.
  3. In a smaller bowl, combine all wet ingredients. Whisk to incorporate egg and liquids.
  4. Add the wet to dry and stir to combine with a rubber spatula. Do not overmix.
  5. Spray waffle-maker liberally with non-stick spray. Using a 1/3 cup dry measure, fill waffle-maker to satisfaction. Do not overfill, batter will expand while cooking.
  6. Close waffle-maker and cook waffles until done. Electric countertop waffle makers often include a light to indicate when waffles are ready. Stovetop cast iron waffle makers will vary based on stove style (gas, electric, wire burner, glass-top, etc.).
  7. Store waffles in warm oven until time to serve.
  8. Serve waffles traditionally for breakfast, or top with fried chicken and smother with hot sauce and maple syrup.

So that’s how I make my waffles! When I make them live on a twitch stream, I start cooking my waffles while my last batch of chicken is in the oil. If I were going to just have some waffles, I’d think these would be delicious with a drizzle of hazelnut spread, some sliced banana, and a dusting of powdered sugar.
