Life update from The Deglutenizer

So last week was insanity from the second I posted my last recipe, and this week will be just as crazy. The night after I made the last post, Mom fell asleep with a pot of broth on the stove. It was a coated pot, and basically the coating turned into lava and filled the house up with smoke (worst smell ever). We spent the rest of the night at a local Best Western. So I wanted to give you all a quick update about what’s going on.

Since then, every spare minute at home has mainly been spent cleaning, because smoke is a delightful substance that likes to linger. We’ve been washing massive loads of linens, towels, and clothes at the laundromat so we don’t get the smoke smell stuck in our washing machine at home. We’re renting an ozone machine this week to let run a full day and suck the smoke out of everything else. I just treated the entire couch with Resolve last night, and still need to do all the rugs. It’s just a giant mess at the moment.

Also, my birthday’s Thursday. We’re going to Carrabba’s, which does now offer a delicious gluten-free pasta. Normally I’d be like, “yay, food I don’t have to cook!”, except that I’m still nowhere near my fitness goals, and I don’t feel like a birthday is a good enough excuse to deviate that much when this weekend is WrestleMania. I actually HAVE been planning on gorging myself on lots of party food and booze for my annual viewing party, but WrestleMania is a friend thing, and birthday dinner is a family thing, so I’ll bite the bullet and just regain everything I’ve lost so far this week.

I’ve also been car-shopping recently, but I’ve hit a few walls. The first is I can’t find a car I like. The second is that I don’t earn enough per month to get financing without a co-signer, and I don’t have anyone I can get to co-sign. I’m going to see about getting a loan or pre-qualified at a credit union. At the moment, though, I’m in a catch 22 where I need a car to get a better job (probably requiring a commute two counties south of where I live), but I don’t earn enough at my current job to qualify for the car (the pay is okay, but there’s only enough work for me to do about 25 hours per week). The only other option might be to find the job first, then walk into the financing office with a letter from my new employer with my projected earnings and just hope that would qualify me.

Anyway, I’m going to be super-busy this week between finding a solution to my car issue, general cleaning for my WrestleMania party, deep cleaning for smoke removal, birthday arrangements, and prepping party food. As you can probably guess at this point, I have absolutely no time to even attempt to make a decent recipe this week, plus all the stuff that goes into publishing the post (video editing, photos, etc.). If I do have some down-time, I’ll try to get another repost or two of old recipes completed.
