Easy Slow Cooker Pot Roast Recipe

Today feels like a “throw everything in the slow cooker” day, and pot roast was one of my very first blog posts. I’ve updated the recipe since then, and thought the weather recently was the perfect excuse to revisit this dish.

Searing is optional, but recommended. I also use wine in my new version of the recipe, so you can omit the wine if you live in a dry household. And if you want to make healthier version, chill the finished roast so the rendered fat solidifies on top, then remove the solid fat before serving. Also, this pot roast is at least 500% better a day or two after it was made.

With all that said, let’s dive into this recipe!

Ingredients:

1 chuck roast
2 tbsp. olive oil
2 medium yellow or sweet onions, diced
2lbs. baby carrots
2 tsp. minced garlic (4 cloves)
1 ½ tsp. dried thyme
1 tsp. dried parsley
salt
pepper
red potatoes, enough to cover
2 tbsp. Worcestershire sauce
optional: 1 187mL bottle red wine
Gluten-free beef broth or stock to cover

Directions:

  1. Liberally coat chuck roast in salt on all sides and allow to sit at room temperature while preparing vegetables.
  2. Turn slow cooker on low heat. Dice onions, then add onion and olive oil to bottom of the slow cooker. Dump baby carrots into pot. Add garlic, thyme, parsley, and salt and pepper to taste.
  3. As vegetables start to soften, sear the chuck roast on medium-high heat (6.5/10). Cast iron pan recommended.
  4. Add seared pot roast to the slow cooker. Fill rest of slow cooker with potatoes, cut into chunks.
  5. Add Worcestershire sauce, plus red wine if using. After adding all ingredients, fill slow cooker to top with gluten-free beef broth.
  6. Cook pot roast on high approximately 4-5 hours, on auto approximately 5-6 hours, or on low approximately 6-8 hours.
  7. When pot roast is done, serve a hearty portion in a large bowl and enjoy.

So that’s how you make a classic pot roast. This is the simplest version of the recipe. Some people like to add tomatoes and corn, others like to make a gravy from the jus, and pot roast is an excellent option for making into an open-faced sandwich or serving over fries with melty cheese.
