

Welcome back! I didn’t post last week because I needed to plan for some upcoming content, including this week’s recipe. Today I’m showing you guys how I make my gyro burger, as well as how I make the tzatziki that I use to dress my burger. What’s a gyro burger? Well it’s all the best things about a gyro, but in burger form!
So the way this burger is made is pretty similar to the classic American burger, except it’s a combination of ground beef and lamb, and it has some mix-ins that will be cooked inside to make it a gyro burger. If you’re craving the classic, it’s basically the same thing except 100% beef, Worcestershire sauce, salt, and pepper. The steps to form the burger patty and cook them properly are the same, except if you’re making a cheeseburger, top the patties with cheese in the last 4 minutes of cooking so the cheese melts.

With those extra notes out of the way, let’s get into how to make the tzatziki sauce to go on the gyro burger first!
Tzatziki
Ingredients:
½ c. grated cucumber
½ c. plain Greek yogurt
1 tbsp. extra virgin olive oil
1 tsp. dry dill
1 tsp. lemon juice
½ tsp. minced garlic
¼ tsp. coarse salt
Directions:
- Combine all ingredients except cucumber.
- Squeeze excess moisture out of cucumber with hands or in cheesecloth or kitchen towel.
- Add cucumber to rest of tzatziki and stir all ingredients together.
- Taste and make any adjustments. Get a fresh spoon after tasting, or use a separate tasting spoon.
- Store tzatziki in the refrigerator at least 4 hours to allow flavors to marry before serving.
Sometimes I just whip up the tzatziki and throw it in the fridge while I make the burgers. It’s better to let it sit longer, but I’m impatient, and I’m bad at planning ahead. The tzatziki is still delicious, it’s just not as tasty as if I’d let it chill more. Speaking of burgers…
Gyro Burger
Ingredients:
~1lb. ground beef, 80/20 blend (or higher fat content)
1lb. ground lamb
1 tbsp. Worcestershire sauce
1 shallot, minced
1 tsp. dry Italian seasoning
½ tsp. dry oregano
Fresh mint, chopped finely
Feta crumbles
Salt
Pepper
Toppings (thin-sliced onion, tomato, lettuce, etc.)
Gluten-free buns
Directions:
- Combine beef, lamb, Worcestershire, shallot, Italian seasoning, and oregano in a medium mixing bowl. Add mint, feta, salt, and pepper to taste.
- Mix with hands until ingredients are incorporated and evenly distributed, but not so much mixture becomes dense. Don’t allow fat to start melting.
- Form large balls, then press flat into patties. Press a dimple into the middle so patty cooks flat. Work quickly and try to handle burger mixture as little as possible. To make equal-sized burgers, use a scale to portion mixture before rolling.
- Preheat 12-inch cast iron pan on medium heat (4.5/10). When pan is hot, arrange as many patties will fit without crowding the pan. Cook 6-8 minutes on the first side, adjusting temperature as needed so burgers cook through without burning on the outside. Flip patties one time and cook on second side another 6-8 minutes.
- Use the touch test to judge that burgers are cooked enough. Poke the seared patties with index finger and feel for firmness. If inside feels too soft, place burger patties into a 300° oven another 8-12 minutes to cook the inside without burning the outside.
- While burgers cook, dress buns with tzatziki, lettuce, tomato slices, and thinly sliced red onion. When burger patties are ready, place a burger on the bun and serve.
- Enjoy a gyro burger with a side of chips or fries, and a tall cider or gluten-free beer.
I hope you enjoy making these delicious burgers at home! I know I certainly love making these any time I’m craving a gyro, especially since it’s easier to find gluten-free burger buns than it is to find gluten-free pita.
